Coffee education aimed at increasing the number of truly informed coffee-lovers.

Our coffee school is meant to generate coffee awareness, educate on the business of coffee, and help people experience the most satisfaction from their coffee in a way that’s relative to each individual.

These lecture-style coffee school classes and interactive sessions are led by Merchant’s of Green Coffee’s co-founder & CEO, Derek Zavislake. Derek has over 20 years of experience in the coffee industry and will answer absolutely any question about coffee, honestly. Though he doesn’t necessarily seek the spotlight, Derek is committed to coffee school because he recognizes the significance and need for true coffee education, from both a consumer and environmental standpoint.

From tree to cup, this class covers the origin of the green bean; its circumnavigation around the globe; its journey from a secret sought-after seed to the second largest traded commodity next to oil; its social & environmental impacts; its processing; its trade; and coffee’s overall supply chain.

Green Beans 101

The Art of Roasting

Many people still aren’t aware that once a coffee is roasted it has a 5-7 day shelf life before it fully oxidizes and takes on that all-too-familiar bitter flavour. The naturally sweet taste of fresh-roasted coffee is the foundation of this class. It covers the science, history, and technology of roasting while demonstrating a variety of methods of roasting coffee in the home.

The simple act of brewing coffee mystifies many and yet it’s one of the simplest concepts to learn; and so rewarding to practise. This class covers, in detail, the basic science behind brewing coffee while demonstrating and exploring the pros and cons of a variety of brewing methods and equipment.

Cupping & Tasting

The cupping process is often regarded as extremely important since it’s the final determining factor in a coffee’s quality, and yet so few people ever actually engage in cupping coffee. In this interactive class everyone cups and tastes three different coffees side-by-side while learning how to chart body and acidity, and develop an understanding of how to differentiate coffee flavour profiles and regional characteristics.
